Baked Falafels

 1.75 cups Dried Chickpeas
 2 Red Onion
 4 Garlic Cloves
 1 cup Fresh Parsley
 2 tbsp Olive Oil
 2 tbsp Fresh Lemon Juice
 2 tsp Cumin
 2 tsp Cinnamon
 1.50 tsp Salt
 1 tsp Pepper
 2 tsp Baking Powder
 ¼ cup Cooking Flour
Night before preparation

Night before cooking soak the dried chickpeas in a large bowl full of water. Expect them roughly double in size. If you can break the chickpeas apart with your fingers they are ready.

Preheat oven to 190°c. Lay out baking paper across a pan and lightly spray some olive oil across the surface.

Process the chickpeas with the blender in small batches to try and keep some rough texture.

Roughly chop the red onion, parsley and garlic. Add these ingredients as well as the olive oil, lemon juice, cumin, cinnamon, salt and pepper to the blender and mix them.

Combine all ingredients together in another bowl. Test the taste and make any adjustments. Then add flower and baking soda. Hand mix thoroughly.

Roll the mix in to small balls and spread them evenly across the tray. Keep them roughly the same size for baking so make adjustments as you go. To make them crispier give them a little press from above.
Spray them all with a bit of olive oil.

Bake for 25 to 30 minutes. Flip them all halfway through.

Serve in wraps or with a salad!
