Bean & Lentil Casserole

 1 Lentils (can)
 1 Butter beans (can)
 1 Diced Tomatoes (can)
 4 Celery Stalks
 1 Red Onion
 1 Fajita Flavour Packet
 2 cups Tasty Cheese
 ½ cup Panko

Rinse and drain the canned lentils, beans and diced tomatoes. Add to bowl.

Finely cut the celery and red onion. Add to bowl.

Add fajita mix and Panko crumbs. mix thoroughly.

Cover and microwave for 6 minutes (stir at 3).
Begin shredding cheese.

Spread cheese across top. Cover and microwave for a further 6 minutes or until cheese is evenly melted.

Uncover and leave to sit for 10 minutes before serving.
