Creamy Potato Salad

 500 g Red Baby Potatoes
 ¼ cup Mayonnaise
 ¼ cup Sour Cream
 3 tsp Apple Cider Vinegar
 2 tsp Horseradish Cream
 4 Baby Gherkins
 2 Spring Onions
 2 tbsp Chopped Dill
 2 tbsp Shredded Mint

Quarter potatoes and steam or boil to cook them. Allow them to drain thoroughly after.

Finely chop the gherkins, thinly slice the spring onion, chop and shred the dill and mint.

Mix all together along with other ingredients and stir thoroughly.
