Rainbow Chicken Salad

 ¼ cup Olive oil
 2 tbsp Lemon juice
 2 tbsp Red win vinegar
 1 tbsp Dijon mustard
 1 Garlic clove
 ½ tsp Salt
  tsp Pepper
  tsp Tarragon
 2 cups Chicken
 2 cups Pasta
 1 Onion
 2 Spring onion
 ¼ cup Almonds
 2 tbsp Parsley

Cut chicken (or any other meat alternative) in to small chunks. Chop spring onion, dice red onion, crush garlic clove and juice lemon.
Begin cooking pasta.
Slice and toast Almonds.

Add olive oil, lemon juice, red wine vinegar, Dijon mustard, crushed garlic, salt, pepper and tarragon in to bowl and mix thoroughly.

Drain pasta and rinse with cold water. Add pasta, onions and chicken to another bowl and pour previous mixture over the top. Mix thoroughly.

Serve and garnish with almonds and parsley.
