Tabouleh

 1 cup Burghul
 2 cups Boiling water
 4 Spring onion
 12 Cherry tomatoes
 2 tbsp Mint
 1 Lemon
 2 tbsp Olive oil
 ½ cup Parsley

Slice the spring onion, halve the cherry tomatoes, chop the mint, juice the lemon and roughly chop the parsley.

Place burghul (cracked wheat) in a heatproof bowl. Pour boiling water over the top and leave for 15 minutes. Fluff with a fork and add remaining ingredients. Stir well.
