Vietnamese Style Salad

 ½ Chinese cabbage
 2 Carrots
 3 Spring onion
 1 cup Mint
 1 cup Coriander
 1 Chili
 2.50 tbsp Rice wine vinegar
 3 tbsp Lime juice
 3 tbsp Fish sauce
 1 Garlic clove
 1 tsp Lemon zest
 1 tbsp Shaved palm sugar
 1 cup Peanuts

Thinly slice cabbage, shred carrots to long length, trim and thinly slice spring onions, chop coriander, mint and chillis. Put in a large bowl and toss lightly.

Juice the lime, crush the garlic, grate lemon zest.

Mix the rice wine vinegar, lime juice, fish sauce, garlic, zest and palm sugar to a small bowl and mix thoroughly.

Pour mixture on top of salad and toss. Sprinkle peanuts on top as garnish.
